A Brazilian delicacy, Picanha is traditionally the most desirable cut of beef in Brazil, Argentina and more recently, Portugal. This cut is incredibly succulent and flavoursome. In Brazil, the traditional preparation is to skewer the meat and cook it over a charcoal grill, with minimal seasoning consisting of only salt. The fat is retained until the steak has been cooked.
