Each tomahawk is a feast in itself - big enough to satisfy four lightweights or one bearded beef guzzler. When cooked right, it’s all melt-in-the-mouth succulence and intense, buttery flavour. We love it reverse-seared: gently brought up to temperature, then finished dirty over hot coals or on a cast-iron griddle, basted generously in compound butter for a golden crust and deep, smoky character.
