Our master butcher leaves a small amount of silverskin on the full fillets to hold them together (these are very tender even when raw). The silverskin can easily be removed with a sharp knife.

    Fantastic Beef Wellington

    One of the best fillet’s of beef I have ever had, tasted and cooked with would 100% recommend please see pictures

    I had to trim very little and cut the middle out of the whole fillet reserving the rest and cutting into another piece for a smaller wellington and then 4 reasonable sized steaks and the end where it tails off to use for a pie possibly or even steak tartare

    Excellent quality meat, cooked blue rare and it fell to bits like slow cooked. Asked for it to be sliced when ordering, however the butchery leaves a lot to be desired and I had to butcher it again when I received the order to make the fillet into edible pieces. Next time I shall just ask for it whole and butcher it myself, but that does not take away from the quality or flavour, simply excellent.
