Beef Curry Recipe

Ingredients

Serves 4

500g Steak Pieces
2 tbsp cooking oil
1 large onion, chopped roughly
2 tbsp tomato paste
5 garlic cloves, chopped roughly
6cm of fresh ginger, chopped roughly
4 large fresh chillis (or 6 small), sliced
2 tbsp of ground coriander
1.5 tbsp ground cumin
1 tbsp turmeric
2 tbsp garam masala
1 tbsp soft brown sugar
500ml beef stock
400g tinned chopped tomatoes
1 fresh lime


The Prep

  1. Remove from the fridge 30-60 minutes before cooking, to bring the steak pieces to room temperature

  2. Remove all packaging and pat dry with some kitchen roll


Slow Cooking

  1. Heat a large ovenproof pan on high heat, add a little oil

  2. Sear the meat until it’s browned all over

  3. Push the meat to one side of the pan

  4. Add the tomato paste to the bottom of the pan - cook and stir for 2 minutes

  5. Add the onion, garlic cloves, ginger and fresh chillis

  6. Add the coriander, cumin, turmeric, garam masala and soft brown sugar

  7. Stir and cook it all together for 4 minutes, you’ll release a lovely aroma

  8. Add the beef stock and tinned chopped tomatoes

  9. Squeeze in the juice from one fresh lime

  10. Bring to the boil then transfer to your slow cooker

  11. Cook on low for 6 hours.

  12. Serve with Boiled basmati rice and some chopped fresh coriander.
