Best Cut Ever
Clod - what a cut of meat! Definitely moved to #1 for me. I did slightly overcook as had problems with smoker temperature but meat was very forgiving. Minimal trim needed and internal fat rendered to nothing giving falling apart meat (like the best pulled pork). So ended up with a big hunk of meat that didn’t really shrink that much. It was approx 8.5kg before cooking (with SPG). Really beefy flavour too.
