Oven Recipe: Reverse Sear Côte de Boeuf

  1. Preheat your oven to 55°C
  2. Season the Côte de Boeuf liberally with coarse/flaky sea salt only
  3. Place the steak on a baking tray and put it in the oven
  4. Cook for around 3 hours, until the internal temperature is 55°C
  5. Use a large pan over high heat and melt some beef tallow
  6. Add the steak and sear it hard, flipping every 20-30 seconds until you build a dark crust and the internal temperature reaches around 60-65°C (around 4mins)
  7. Rest with garlic and 'Herbes de Provence' melted in butter
  8. Serve and devour.
