This is the perfect alternative to brisket.

Smoke it like a brisket or our 'Flatiron Topblade'. The Pulpón de Vacío is the lower section of our popular 'Vacío' and includes what butchers call 'Goose Skirt' (a smaller version of this is sometimes called Brisquetta). The generous fat cap renders down during the cook to create a delicious, moist and tender slice every time.

The Pulpón de Vacío is also suitable for live fire cooking on Asado style barbeques - in fact, the cut originates from Argentina. Our good Argentinian friend and live fire cooking expert, Matías (Banquet1415) introduced us to this outstanding cut.

Serve with chimichurri for an authentic Argentinian vibe!

Delicious!
Fantastic cut of meat that I cooked on the bbq to get a good sear but medium rare in the middle then left to rest. Seasoned only with salt the meat was tender and lean with a really deep beef flavour. I made the leftovers into a Thai style salad served cold. Like all the beef I bought from IDevour the quality and flavour are top notch!

Once again, this cut of beef is always outstanding! I use this in between eating steak every day as it keep the cost down but tbh it’s as tender and tasty as most full steaks as long as you sous vide it! Superb quality, superb value as always 😁🥩🐄
