These well-used neck muscles contain lots of connective tissue making them popular for their balance of meat and fat. Braising steak is best cooked low and slow. The connective tissue will dissolve and reward you with a deep, rich flavour and a tender fall-apart texture.

These steaks are sold for cutting into chunks. They vary in size and are sold by weight only, you will receive 3-6 steaks in total.
