Salt, Sear, Roast, Rest Method

SALT

  1. Remove all packaging

  2. Add an even coating of sea salt, or kosher salt, to all sides of the steak

  3. Place on a plate uncovered in a fridge for 24hrs

SEAR

  1. Remove from the fridge and give it time to come to room temperature, about 30 mins should do it

  2. Heat a heavy frying pan to a searing temperature

  3. Add a spoonful of iDevour beef tallow and allow it to melt

  4. Add the steak and sear on all sides until you reach your desired colour


ROAST

  1. Pre-heat your oven to 180ºC (fan)

  2. Add the seared steak to a roasting tin with fresh garlic, fresh thyme, fresh rosemary and a dollop of butter

  3. Roast uncovered until the internal temperature of your steak reaches 58ºC (medium)


REST

  1. Remove the steak from the roasting tin

  2. Allow it to rest for 10-15 mins before devouring it!
