Salt, Sear, Roast, Rest Method
SALT
Remove all packaging
Add an even coating of sea salt, or kosher salt, to all sides of the steak
Place on a plate uncovered in a fridge for 24hrs
SEAR
Remove from the fridge and give it time to come to room temperature, about 30 mins should do it
Heat a heavy frying pan to a searing temperature
Add a spoonful of iDevour beef tallow and allow it to melt
Add the steak and sear on all sides until you reach your desired colour
ROAST
Pre-heat your oven to 180ºC (fan)
Add the seared steak to a roasting tin with fresh garlic, fresh thyme, fresh rosemary and a dollop of butter
Roast uncovered until the internal temperature of your steak reaches 58ºC (medium)
REST
Remove the steak from the roasting tin
Allow it to rest for 10-15 mins before devouring it!
