Our recommended ‘2 minute Method’ for BBQ:
Unpack the steak
Cover in coarse sea salt
Refrigerate uncovered overnight
Fire up the BBQ to searing hot
Cook straight from the fridge, (don’t raise the steak to room temperature like you usually would)
Sear for 2 minutes on one side then flip and sear for 2 minutes on the other side
Keep repeating step 6. (2 mins on each side and flip), until you reach an internal temperature of 125f
Allow the steak to rest with melded garlic butter for 10-15 minutes
Slice and serve with a pinch of sea salt, black pepper, finely chopped flat leaf parsely and a drizzle of melted garlic butter
